Pizza Sauce

2 Medium Chopped Onions
4 cups Chopped Tomato’s
2 teasp. dried Oregano
2 teasp. dried Basil
4 Cloves of Crushed Garlic
1 1/2 teasp. Sea Salt

Put tomato’s, onion, garlic, and sea salt in a stock pot on stove.
Bring to boil reduce heat and simmer for 1 hour.
Scoop tomato mixture into glass blender and blend for 15 seconds.
Strain the mixture through small mesh stainless steel colander over another stock pot.
(This will allow juice to go into stock pot so nothing will be wasted.)
Continuing repeating this process until all of tomato mixture is been blended and strained.
Put thick tomato sauce into a sauce pan and return to stove.
Add basil and oregano.
Simmer for an additional 15-20 minutes.

Return the juice to stove also let it simmer for 15-20 minutes.
Place sauce into pint hot sterilized jars.  Seal with hot lids and rings.
(Perfect serving for 11 x 15 pizza.)

Place juice into quart hot sterilized jars.  Seal with hot lids and rings.

Yields 2-3 pints of pizza sauce and 3-4 quarts of wonderful onion and garlic infused tomato juice.
