juice of 12 Lemons (juice at room temperature for more juice)
1 TBSP. Sea Salt
1 cup Whey
3/4 – 1 cup Honey (depends on how sweet you like it)
Use a 1 gallon glass jar with lid. Place all ingredients in jar. Fill remainder of jar up with filtered water. Shake and let ferment on counter or warm dark place for 3 to 4 days.
Chill and serve.
Always leave and inch or two at top of jar while fermenting as the gas expands and it could leak out. Use caution when opening. Open slowly and careful so does not bubble out.
