1 cup of softened (not melted) Coconut Butter
1/4 cup of softened (not melted) Fat (Coconut Oil, Lard, Ghee)
1/2 teasp. Sea Salt
1 teasp. Baking Soda
Place all ingredients in a mixing bowl and blend with immersion blender until batter is smooth and no lumps appear.
Place ingredients into a greased loaf pan.
Bake at 300 degrees for 40-50 minutes.
Cool and store in refrigerator.
Note: You may serve this bread fresh or toasted.
This recipe is wonderful as it uses coconut butter instead of coconut flour to give you the benefit of the good fats without the fiber, which can be irritating to the gut of some individuals on gut healing diets.
