Peach Jam

8 Cups Fresh or Frozen Peaches (can use strawberries or fruit of choice)
1 cup Raw Honey
1 Tablespoon Vanilla
3 Medium-Large Apples, Peeled, Cored and Grated
2 Tbsp. Lemon Juice

Combine all ingredients in a saucepan. Heat to boil and then simmer for about 50 minutes, stirring occasionally. Skim froth from top and discard, if desired. Place in mason jar and store in refrigerator.
